Healthy Tofu Pasta Bowl

  • 120g shells pasta or wholemeal spiral pasta
  • 50g baby spinach
  • 1 large carrot (shredded)
  • 1 small cucumber sliced
  • 80g purple cabbage
  • Rafiki
  • 1⁄2 medium size avocado
  • 400g mix coloured cherry tomato cut in half
  • 1 tablespoon Tahini
  • 1 tablespoon lemon juice
  • 2 teaspoon olive oil
  • 200g Japanese tofu, diced
  1. Cook pasta in a large saucepan of boiling water following packet instructions.
    Drain and refresh under cold running water, transfer to a bowl and toss with a
    little oil.
  2. In a bowl combine tahini, lemon juice, oil and warm water mix it thoroughly until
    you get the smooth consistency.
  3. In a round serving bowl arrange the vegetables and make sure to achieve the
    colour contrast of the vegetables, place the tofu in the middle.
  4. Drizzle with tahini sauce and sprinkle with Rafiki.
  5. Enjoy.
