Pistachio Caesar salad

Pistachio Caesar salad

  • 80g pistachios
  • Oak lettuce
  • 2 slices of bread
  • 100g streaky bacon
  • 1 bottle of Caesar dressing
  • 30g sunflower seeds
  • 30g butter
  1. Cut the bacon into strips and fry in a pan until crispy, remove from pan and place on paper towel to soak up excess oil.
  2. Butter the bread and cut into 2cm squares. Heat a frying pan on a medium heat and add the bread along with a sprinkle of Rafiki. Cook and toss the bread until crispy and golden brown.
  3. Divide and wash the oak lettuce, roughly chop and put into a bowl and toss with the Caesar dressing, Rafiki, bacon and croutons
  4. Roughly chop the pistachios and sprinkle on top of the salad along with the sunflower seeds and some more Rafiki
  5. Enjoy
